Rhubarb Oat Bars

I created this recipe because I wanted something that was less like a dessert and more like a breakfast snack bar.  These Strawberry Rhubarb Oat Bars definitely fit the bill.  You can serve them for dessert because they are sweet and delicious but the ingredients are healthy enough to serve for breakfast or a snack.

To give kids more exposure to rhubarb’s tart flavour, omit the maple syrup from the filling.

Strawberry Rhubarb Oat Bars

Prep Time: 10 minutes
Cook Time: 30-40 minutes

Ingredients

Filling:
1 cup fresh strawberries, chopped
1 cup fresh rhubarb, chopped
1 ripe banana, chopped
1/8 cup maple syrup
1 tsp vanilla extract
2 tbsp fresh lemon juice
1 tbsp chia seeds mixed with 3 tbsp water

Base + Crumble:
4 cups of oats, divided in half
1.5 tsp ground cinnamon
1/2 tsp sea salt
1/2 cup unsweetened applesauce
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/4 cup water
1 tsp vanilla extract

Directions

1.  Preheat oven to 375 degrees.  Line an 8 or 9 inch square dish with parchment paper.  Mix chia seeds and water in a small dish and set aside.
2. Prepare Filling:  In a small saucepan, mix all filling ingredients except chia mixture.  Bring to a boil, stir and cook until berries and rhubarb are cooked down.  Remove from heat and stir in chia mixture.
3.  Prepare Base + Crumble:  Take 2 cups of the oats and put in the food processor.  Mix until it turns into flour.  Take the other 2 cups of oats and place in a large bowl.  Add in processed flour, cinnamon and sea salt and whisk together.  Add remaining ingredients and mix well.
4.  Take approximately 2/3 or the oat mixture and press it down into the prepared dish with your fingers, creating a crust that is about 1-1.5 inches thick.
5.  Pour filling on top and spread over the base with a spatula until even.
6.  Crumble the remaining oat mixture on top.
7.  Put the dish into the oven and bake for 30-40 minutes until golden brown.  You could eat this raw as well but it tastes better just slightly toasty.
8.  Allow to cool before cutting into squares.
