Banana Bread

If you follow me on Facebook or Instagram, you will already know that we welcomed baby Maggie into the world on February 1st!  She’s sooooo lovely and I’ve spent the last four weeks snuggling with my new baby girl and just hibernating indoors as it’s pretty darn freezing here in Canada right now.  It’s been wonderful!  But now that Maggie and I have established more of a routine, I’m back to blogging – and today I have a recipe for you.

Actually, I started this post during the final week of my pregnancy when I was officially in nesting and preparation mode. Along with taking lots of time for mama self-care (meeting up with friends, yoga, and of course napping!) I also tried to do a bit of food prep, since I knew from experience that once the baby arrived, free time would be difficult to come by.

I remember from when Tyson was born that breastfeeding took a lot out of me and I was STARVING all the time. I always wished that I had more easy yet healthy snacks available to grab between feedings and diaper changes. This time around I wanted to be prepared, so I worked on stocking my freezer with a few different snack options – one being this grain-free banana bread.

I created this recipe quite a while back but it took me a number of trials to get it perfect. I think I’ve finally nailed it. In fact, Jon’s reaction after trying a slice was “this is the best banana bread I’ve ever tasted”. Trust me, this comment is worthy of attention because he is often skeptical of my “healthy treats”.

This grain-free banana bread is a nice alternative to most recipes because it is high in protein and very low in sugar, which makes it a good breakfast option for the whole family. It mostly gets its sweetness from the bananas plus a small amount of honey. You may be doubtful that it will actually turn into “bread” without any flour or other grain, but it totally does and it’s moist and delicious.

I doubled my last batch to make both a loaf and some muffins to put in my freezer, and it has been great to snack on during these first few weeks of new mommyhood when I have been time-crunched and ravenous. It has also been nice to have easy snacks for Tyson as I get used to juggling two kiddos.

Grain Free Banana Bread

Ingredients

2 large or 3 small overripe bananas
1 cup almond butter
1/4 cup honey
4 eggs
2 tsp vanilla extract
1/2 tsp sea salt
1 tsp baking soda
1-2 tsp cinnamon (optional)

Directions

1.  Preheat over to 325F and grease a loaf pan with butter or coconut oil (or line with parchment paper).
2.  Smash the bananas in a bowl using a potato masher or a fork.
3.  Add remaining ingredients and mix well until a smooth batter forms.
4.  Add batter to greased pan and place into oven.
5.  Bake for approximately 50 minutes, or until the centre is firm.
6.  Remove from oven and allow to cool completely.
7.  Cut, serve and enjoy!
